“UNDERCOVER’’ is a thematic dining experience with cuisines made from the unknown sea creatures, in partnership with Chef Angel Leon, with the goal of acquainting the knowledge of unmapped underwater realm through obscure blockage of visuality gives rise to the sense of taste, use the unique representation of unknown underwater biomass with enormous nutrition and gastronomic skills that deliver relentless delightfully and an immersive dining environment (atmosphere) that created by advanced technologies. So, guests who are keen to learn about the undiscovered underwater world can explore and reveal the mystery of it not only through their senses but also through their spirit.
CHEF
ÁNGEL LEÓN
Ángel León, known as the “Chef of the Sea” . A Spanish Chef with three Michelin stars, he looks to the sea as his greatest source of inspiration for innovating cuisine. Ángel León’s discoveries for avant-garde cuisine include the use of parts of the seafood that are normally discarded to protect the ongoing viability of life on earth that can translate into a real intention for change. He focuses on the exclusive culinary experience that engages vibrant, delicate and diverse flavors of seafood along the coast.

Malibu, California

The project is located in Malibu where it offers a more natural atmosphere, due to proximity to the ocean and providing favorable conditions.
In an area characterized by a unique ecosystem, the Malibu coast will undoubtedly provide the “Chef of the Sea” with plenty of inspiration for his continuously innovating menu of marine creations.

EXPERIENCE
Facade
At the entrance, curved stone meets the lower roof to wrap near the entrance, giving a sense of protection. The only open entrance has a slowly upward slope that leads guests into the space.

Hallway + Reception
Upon entering, the ocean is visible through the left-hand windows, which lead guests to the reception desk, where they will be greeted by staff.




Casual Dining + Bar
The casual dining and bar area provides more flexibility for guests who can order freely from the menu. The window on the left side of the bar brings natural light into the space. So that guests can enjoy the view of the coastline, before the enter the mysterious dining room ambiance.

Fine Dining Hallway

Fine Dining Booth

When guests begin their dining experience, the projection mapping creates an immersive underwater experience, allowing shifting waters to ‘enter’ the booth. The whole experience is a culinary theatre that surprises guests. They also acquire knowledge of the underwater realm, and feel the mystery of oceans, through the curated taste of unknown sea cuisines.

Guests leave through the side door and walk to parking. On the left, blue colored panels move from dark to light, reinforcing the feeling of emerging from deep waters.
